Which variety is the sweetest?
Medjool and Halawi consistently score highest on sweetness in our editorial tastings — both are soft, caramel-forward, and best eaten as a snack or as paste.
Can I substitute one variety for another?
Yes, with consequences. Swapping Medjool for Deglet Noor produces a drier, firmer result; the reverse produces a softer, stickier one. Adjust recipe liquid accordingly.
